As I talked about in my last post – we are doing some radical changes in our diet and coconut oil is one of  them. I just found a video that validates what I am doing… It is really exciting for those of us who have love ones fighting the good fight.

My husband and I are on a journey – one that is shaking up our lives. It sounds pretty radical doesn’t it? Well, it is a completely different way of eating, foreign to my husband for sure. When we were visiting my stepson and daughter-in-law, they told us about a preliminary study on a diet that may help Parkinson’s patients. This way of eating had been used for years (since the 20’s) on epileptic patients and helped control their seizures.  It is showing promise in different neurological functions – such as dementia and Parkinson’s.

So I have done some research myself and read the same thing – I know when I am on a low-carb diet my blood panels are fantastic – but this is much more extreme. My husband is a fruit lover and eating Indian food all the time is a bread eater. This diet is called the “Keto Diet.” It is 70% fat, 25% protein and 5% carbs.

Taking all the refined foods and sugars out of our diets – high-sugar  fruit out and no more grains…

I talked him into doing it for six weeks and then getting blood tests on his cholesterol, etc. He takes Lipitor and his cholesterol is low, but the good cholesterol is way too low.

I am hoping the test will show his good cholesterol up – and his blood sugar down.

This is testing my fortitude; I have to cook from scratch so that he doesn’t get too bored, and he is having really big doubts about the fat. I believe good fats are important for health. Fats are not an issue for me but for my husband, it is a big one. I am also using a lot of coconut oil it is supposed to reduce the inflammation in the brain (that they think helps develop Parkinson’s).

Now I know how a woman in the 50s felt. I did a lot of cooking when I was married the first time before microwaves (yes I am that old my first marriage was in 1978). I still used soup, and instant items like “Hamburger Helper, Canned Chile, etc.) in my meals.

So much easier for sure – now I am working with almond flour, coconut flour, and all types of things that are expensive but there is nothing I wouldn’t do to help my family stay healthy.

I do have to say in the three weeks we have been doing this my skin has never been better, and I actually think I look younger – have you heard of the book “The Wrinkle Cure?” It talks about how your diet affects your skin – I do believe it now.

However, in the end as I have grown older – I have had an epiphany; I want to live old and healthy not struggling with sickness.

Health is wealth – without it; we have nothing, don’t you agree?
